What a ceremonial cacao test can do – and what it can't
When people search for "ceremonial cacao test", they usually hope for a ranking. With ceremony cacao, that's tricky: taste is personal, and the varieties differ in origin, aroma and form. That's why we've deliberately avoided inventing ratings with points or stars. Instead, you get the tools here to make a good decision yourself.
We're a small shop from Austria selling pure ceremonial cacao mass from Ecuador and Peru. In our experience and that of people around us, where there have also been some tests with other suppliers, the cacao offered here on Zeremonie-Kakao.at is among the best.
These criteria help you when comparing
- Ingredients: With ceremony cacao, there should only be cacao mass inside, without sugar, milk powder or flavourings. Check the ingredients list.
- Origin and variety: Does the product state the country and cacao variety (e.g. Criollo)? The more precise the information, the better you can compare.
- Flavour profile: Some cacaos are mild and earthy, others fruity and zesty. This should be described so you can find something that suits your taste.
- Form: Block, drops or wafers can be dosed differently and melt at different speeds.
- Price per kilo: Compare not package prices, but the kilo price. Only that way is it truly fair.
- Transparency: Is there an imprint, clear terms and conditions, and a person you can reach?
How to run your own cacao test at home
The best ceremonial cacao test happens in your cup. Here's how to do it:
- Take your time in a calm space, without distractions from your phone or other activities.
- Prepare each variety in the same way, with the same amount and water temperature, so the results are comparable.
- Smell it first. Then pay attention to the initial taste, the aftertaste and the consistency.
- Make brief notes in keywords about what stands out: fruity, nutty, earthy, bitter, smooth.
- Between varieties, have a sip of water and take a little break.
If you taste together with friends, it quickly turns into a lovely evening. You'll notice how differently the same cup is perceived.
Our varieties at a glance
All our cacaos cost 60,00 € per kilo, so you compare directly by flavour and form:
- Sierra Ecuador Block: smooth, mild, very fine aroma with pleasant bitterness, gently earthy, rounded and balanced. A good way to start.
- Criollo Peru Block: smooth, elegant and multi-layered. Criollo is considered a particularly rare cacao variety.
- Criollo Peru Drops: the same fine Criollo in drops form, easy to dose and quick to melt.
